Hyodam Kalguksu Dakhanmari Myeongdong
I was looking for dakhanmari in Myeongdong, Seoul, and decided to visit Hyodam Kalguksu Dakhanmari Myeongdong Main Branch.
Dakhanmari is a Korean whole chicken hot pot, where chicken, potatoes, rice cakes and green onions are cooked together in a light broth.
When I visited, the restaurant had more than 17,000 reviews on Naver Maps. There were also people waiting near the entrance.
It had been a while since I last ate dakhanmari, and this meal reminded me how much I enjoy it.
I liked it enough that I would bring a foreign friend here when they visit Korea.

Inside the Restaurant
One thing I noticed inside was a framed guide explaining how to eat dakhanmari.

The instructions were available in Korean, English, Chinese and Japanese.
This was useful because people trying dakhanmari for the first time might not know when to eat the chicken, potatoes or noodles.

There were also instructions on the wall explaining how to prepare the restaurant’s dipping sauce.
Other notices included “One menu per person, please” and “We do not offer takeout for leftovers.”
Soy sauce, mustard and paper cups were already on the table, so we could prepare our dipping sauce while waiting for the chicken.
How to Order and Pay at Hyodam
You can order and pay directly using the touchscreen monitor on your table. The system supports multiple languages, making it convenient for international visitors. Simply select your preferred language, choose your dishes, and complete your payment on the screen.

What We Ordered
We ordered a whole chicken for two people and a potato pancake.
The chicken was served in a large pot with rice cakes, potatoes and green onions.
The broth was clear and mild, with a chicken flavor that became richer as everything cooked.

We also ordered a potato pancake.
It was crispy on the outside and came with dipping sauce in the middle.
The crispy pancake was a nice contrast to the soft chicken and warm broth.

The menu also included half-chicken kalguksu, which looked like a practical option for someone eating alone.
We ordered enough food for two people, and by the time we finished, we were so full that we didn’t feel hungry again until dinner.

This is how Dakhanmari (Korean whole chicken soup) is served at Hyodam. A minimum order for two people is required. Enjoy the chicken and potatoes with the restaurant’s special dipping sauce, then add the kalguksu noodles to the broth and cook them before eating.

This is how a single serving of Chicken Kalguksu is served at Hyodam. It’s available for one person, making it a good option for solo dining in Myeongdong.

How to Make the Secret Sauce
One of the best parts of eating dakhanmari is making your own dipping sauce.
The restaurant has instructions on the wall, so you don’t need to know the recipe before visiting.
Here’s how I made mine.
- Prepare a small bowl for the sauce.
- Add half a spoonful of the spicy seasoning served as a side dish.
- Pour in soy sauce according to your taste.
- Add a little mustard.
- Mix everything together.

The spicy seasoning, soy sauce and mustard created a salty, tangy dipping sauce with a little heat.
The mild chicken tasted even better when dipped into it.
I especially liked how the mustard added a sharp flavor without overpowering the chicken.
How to Eat Dakhanmari
If you’ve never tried dakhanmari before, the process is simple.
The restaurant provides an eating guide, and we followed the instructions during our meal.
- Boil the chicken: Let the chicken cook for about 5–10 minutes, following the restaurant’s instructions. Make sure it is fully cooked before eating.
- Prepare the sauce: Mix the spicy seasoning, soy sauce and mustard while the chicken cooks.
- Enjoy the ingredients: Start with the rice cakes, followed by the cooked chicken and potatoes.
- Finish with kalguksu: Add noodles to the remaining chicken broth and boil for about 5 minutes, or until fully cooked.
For me, the best part of dakhanmari comes at the end.
Finish with Korean Chicken Noodle Soup
After eating the chicken, we added kalguksu noodles to the remaining broth.

The noodles absorbed the chicken broth, which had become richer after cooking the chicken and vegetables.
Even though I was already full, I kept eating the noodles.
The restaurant’s cabbage kimchi also went well with the kalguksu.
We enjoyed it so much that we refilled the kimchi three times.
For anyone trying dakhanmari for the first time, I wouldn’t skip the noodles at the end.
Tips Before You Visit
Check the break time. The restaurant was listed with a break starting at 15:30, so confirm the current schedule before planning a late lunch.
Order for your group size. Whole chicken portions are available for two, three or four people. There is also a half-chicken kalguksu option for solo diners.
Follow the restaurant’s ordering policy. A notice asks customers to order one menu item per person.
Don’t order too much. The restaurant has a notice stating that leftovers cannot be taken out.
Save room for noodles. Adding kalguksu to the remaining chicken broth is one of the highlights of the meal.
Consider public transportation. Euljiro 1-ga Station is nearby. If you’re driving, check the restaurant’s latest parking information on Naver Maps.
Visiting with family? Group seating and baby chairs were listed as available, but it’s worth confirming before visiting.
